
These have become a weeknight staple for me. They’re easy and hands-off, unlike frying quesadillas. You mix cheese, beans, and any chopped vegetables you want together in a bowl, then spoon it onto tortillas on a baking sheet. Cover each with another tortilla, oil it, top it with some more cheese, and then bake it at 450 F for 7 minutes or so. You’ll want to keep an eye on them to check if they’re burning.
Eat with salsa, guac, sour cream.
