Apple oatmeal in the Instant Pot

Screw steel-cut oats. I never liked the texture, and I never will. I make Minimalist Baker’s Instant Pot Oats with regular old rolled (gluten-free) oats, and they’re creamy and delicious. You mix a cup of oats with 2.5 cups liquid (a mix of dairy-free milk and water), and pressure cook them for 2 minutes with a 10-minute release. I add two chopped apples on top before pressure-cooking, without mixing. After cooking, I add a spoonful of maple syrup, a pinch of salt, and half a teaspoon cinnamon and mix it in.

Before eating I also drizzle in some nut butter. I recently tried Artisana Organics’ seasonal “Gingerbread pecan butter” flavor and it goes perfectly with apple oatmeal. I also like their Hazelnut Cacao flavor.
