

The kitchn has a “dear dinner therapist” column by Kelli Foster that answers variations on the question, “what’s something quick but healthy that I can make for dinner?” I found it while also looking for weeknight dinner ideas, and decided to make the easy beef and broccoli noodles and the one-pan caprese baked chicken.
The recipes were straightforward and didn’t require a lot of special ingredients, though I did have to buy “balsamic glaze,” vs. using the balsamic vinegar I had. I was able to shorten the prep time by taking shortcuts like buying already chopped broccoli florets and replacing the chicken breasts with thighs. So, they were as quick and healthy as promised.
But the taste was just okay. I would describe it as utilitarian, which isn’t really something you crave for dinner. After eating them for a few nights, I froze the leftovers and I haven’t been tempted to reheat them.
