Tzatziki sauce with everything

Last week I decided to prep my own sauce (Tzatziki) and prepare a couple of other ingredients: air fried shrimp and spiralized zoodles. Then I combined those with other ingredients to make weekday lunches and dinners:

  • Shrimp tacos — shrimp, corn tortillas, arugula, shredded cheese / feta, sliced cucumbers / nectarines, Tzatziki. I changed up the toppings and also had this as a salad. I made the shrimp with gluten-free panko, which didn’t really stay on, but they were still flavorful.
  • Zoodles with smoked salmon — Zoodles, Fishwife smoked salmon, peas, Tzatziki. I cooked the zoodles in a pan with a tbsp of oil for 2 minutes.
  • Pizza — Pre-made crusts, tomato sauce, mozzarella, feta, tomato, pepper, seasoning. Served with a salad and Tzatziki drizzled on top of everything. I used Manini’s mini gluten-free pizza crusts, and they were just okay. But the toppings tasted great.
