Kodiak pancake mix review

Kodiak promises high protein and whole grains — and they’ve been gradually filling every breakfast food grocery aisle I visit. I’ve had their frozen foods and snacks and I decided to try their cinnamon oat flapjack and waffle mix. They have gluten-free mixes, but I haven’t spotted one in person yet.

The appeal of the pancake mix for me is that it’s quick: you just add water to a cup of mix, stir, and you’re ready to cook. One cup yields about one big waffle or 5-7 small pancakes. I would call the texture of the cinnamon oat mix dense and dry, with the chewiness of oats. You definitely need a topping, like syrup, fruit, or yogurt. In my last batch (pictured) I tried using the optional egg and milk as suggested on the box, and adding some cocoa powder and blueberries. It was still dense and dry, but the blueberries added some occassional moisture.

Overall, the mix is great for a filling and convenient breakfast, even if it’s not the tastiest. I’m planning to experiment with their other flavors.
