
I’ve long been envious of the lifestyle described in Vox’s Chicken soup (and more) for the Remote Worker in 2019:
And this is why soup season is so glorious: it’s the delicious solution to many remote work problems. Once October starts, it’s acceptable to make large pots of delicious soup that get better every day that it sits in the fridge.. Soup season, when done well, flips the above problems on their head: you start to wonder how long you can reasonably wait until lunch, because you’re so excited about the meal you’re soon to have.
I’ve often wished, when it’s half an hour after I was supposed to get up and make lunch, and my stomach’s growling, that I had a pot of soup waiting in the fridge. But it takes planning and work to cook an extra hot meal for the week.
Well reader, it’s October 2024, and I finally did it. I cooked a soup just for lunch. I chose this Instant pot red lentil curry because it was very fast. Chop an onion, throw everything in, and pressure cook. I had it with toast and a dollop of yogurt, and it was warm, delicious, and satisfying. I can finally agree that yes, soup season is glorious.
