JUST Egg vs. Egg

My stomach doesn’t always react well to eggs, which limits both my breakfast and ramen topping options. I’ve seen JUST egg in just about every supermarket I go to, so I finally decided to give it a try. I chose their frozen folded egg, thinking it would make an easy, filling breakfast. And it does! When I’m in the mood for something savory, or an egg sandwich, I toast it and voila, breakfast is ready.

But it’s also great in other dishes where eggs are usually found. I’ve just started experimenting, but I really enjoy it on my ramen. Here’s how I make it for two:

  • Two ramen cakes (I like Lotus Foods’ Rice Ramen)
  • One packet of instant miso soup
  • Two JUST folded eggs, toasted and sliced
  • One sheet of nori, torn into small pieces
  • Green onions, chopped
  1. Cook the ramen according to the package directions.
  2. While the ramen is cooking, split the miso soup powder into two bowls.
  3. When the ramen is finished, before draining, ladle the hot water into the bowls.
  4. Drain the ramen and divide it between bowls.
  5. Top with JUST eggs, nori, and green onions. Add seasoning and sauces if you’d like.
