
I took a trip to Trader Joe’s and looked for ingredients for my sheet pan formula. I had an idea of what protein I wanted to get, but I didn’t have a plan for what to make. Here’s what I found:
- Baby corn
- Brown beech mushrooms
- Broccoli and cauliflower florets
- Cherry tomatoes
- Butternut squash cubes
- Onion
- Chicken shawarma
- Tzatziki sauce
Here’s what I already had:
- Olive/canola oil
- Salt and pepper
- Seasoning mix (I used za’atar but you could use any mix!)
- Gluten-free buns
Here’s what I did:
- I first cooked the chicken according to the package directions: place on rack over a tin foil lined pan, bake at ~20 minutes at 400 F. Check with a thermometer to make sure it reaches 165 F.
- Then I removed the foil, chicken, and rack, and lined the pan with parchment paper. I added the vegetables and coated them in oil, salt, pepper, and seasoning. I raised the oven temp to 425 F and baked for 35 minutes, plus 2 minutes broil.
- Finally, I assembled the sandwiches: chicken, vegetables, and a dollop of tzatziki.
