The microwavable meatball lunch hack

I make this with Trader Joe’s turkey meatballs, but I suspect that it would work with any frozen cooked meatballs. These are a bit big and the package recommends microwaving them for 4 minutes. I put 6 in a glass container and cover them with a microwave-safe lid.

Once they’re hot, I set them aside to cool and put a piece of lavash on a plate. I add any other toppings that I want to warm up (like leftover roasted vegetables), and microwave them together for 30 seconds.

Next I slice up the meatballs and add them to the lavash. I also add cold toppings: greens, sliced tomatoes, feta, and tzatziki, for a mediterranean flavor.

Finally, I roll it up, pushing the sides of the lavash in as I roll to get it to stay together. I slice it in half, and that’s lunch!
