Here’s a roundup of recipes I tried recently that I really enjoyed. They’re from Nourished by Nic and Downshiftology.

This is quick to make, filling, and tastes a bit like caramelized banana when I let it burn slightly on the top. My batter is goopier than pictured in the recipe, so I use a silicone mat in the air fryer basket.

I made this with ground turkey and it was warm and filling without the work of stuffing peppers.

A teriyaki take on air fryer salmon bites. I’ve found that the challenge with these is to not overcook them. They’re soft-but-crispy delicious when I get it right.

Butter Chicken

This butter chicken is as velvety and creamy as promised, thanks to actual cream, cashews, and butter. The chicken also stays tender through several rounds of leftovers. It’s more steps than I usually do (cut up chicken, marinate chicken, cook chicken, cook sauce, blend sauce, put it all together) but it definitely pays off. I threw in spinach when reheating for a vegetable (you could also add peas).

Chickpea Curry

Chickpea curry

Chickpeas with coconut milk, curry powder, cilantro, and lime. I added a dollop of yogurt and made some quick whole wheat pita chips: slice pita bread into triangles, put in the toaster oven at 375 F for ~5 minutes or until crisp.
