I heard about whipped cottage cheese from You Gotta Eat, and apparently it was a TikTok trend at some point. The idea is that cottage cheese is high protein, but the texture is weird, so let’s put it in the blender and create a food with the same nutrients, but a creamier consistency. You can add in sweet or savory flavorings, depending on how you want to eat it.
I opted for savory, with salt, pepper, lemon juice, and olive oil. I decided to eat it like mozzarella on toast, with spinach, tomatoes, and a drizzle of balsamic vinegar.

The strange thing is, I found the texture even weirder after blending the cottage cheese. It was dry, almost chalky. I’m not sure if that was because of my topping choices, or if that’s just how it is.
Next I tried making it into a salad dressing. I stirred balsamic vinegar and more olive oil into the cottage cheese, and topped a salad with it:

That was creamier, but still just okay. I liked how it added protein to the salad, but I’m not planning on making it again any time soon. Maybe cottage cheese would be good in a smoothie, but I’ll stick to more conventional cheese choices in my sandwiches and salads.
