

I’ve been watching the show Julia and some of Julia Child’s cooking shows on YouTube. There’s an episode where she makes three different kinds of soufflés with Jacques Pépin. One is a huge chocolate soufflé that looks like a gooey chocolate cloud. I didn’t quite want to recreate it, but I wanted to make something special for New Year’s with that chocolatey yet airy texture.
I searched and found Sally’s guide to making chocolate soufflé. It’s really four mini soufflés in 6oz ramekins. I had these cute 5oz French bistro themed ramekins to work with, so I decided to try it out. And they came out perfect on the first try. The recipe’s tricks for getting a good rise (adding cream of tartar, refrigerating the batter, changing the oven temp) worked! I did need to slightly overfill the ramekins since they were 5oz, but I created the channel around the top and they rose up (if a little lop-sided).
