A great way to repurpose leftovers: layer tortilla chips, cooked chicken, and cheese in a bowl. Microwave for 30 seconds or until cheese is melted. Top with salsa and chopped scallions or your toppings of choice. Enjoy in the ~5 minutes before your carriage turns into a pumpkin.

    I would think that the microwave would make the chips soggy. Do they stay crisp?

      They don’t get super soggy in 30 seconds, but they do change. They’re more chewy and cheesey. You could add in the chips after melting the cheese with the chicken if you prefer them fresh and crisp. Leftover rice also makes a good bottom layer.
