Blueberry yogurt popsicle

I love yogurt popsicles for dessert. They’re refreshing like fruit popsicles, but also creamy like an ice cream bar. Because they’re not really ice cream, or even frozen yogurt, they tend to be made from healthier ingredients, like real fruit and yogurt.

I recently decided to try to make my own. I figured this way I could pick the fruit flavors, and even if I had no popsicles in the freezer, I could easily make a batch using whatever yogurt I had in the fridge. I bought a popsicle mold and looked for recipes.

First I tried these 3-ingredient blueberry yogurt popsicles, though I swapped half the blueberries for strawberries to create a unique berry flavor. I used a vanilla Greek yogurt. It came out like I’d frozen a chunky smoothie on a stick. It was like chewing berries encased in ice.

Next I tried Serious Eats’ blueberry yogurt popsicles recipe. They have a whole methodology for making yogurt popsicles: use full-fat yogurt and granulated sugar, and gently cook the fruit. I stuck to blueberries for this one, and used the thickest plain Greek yogurt I could find. I even added heavy cream and lemon juice as directed. I dutifully blended and strained the cooked blueberries. The result was creamier than my first attempt. The texture was fine. The taste, however, was weird. Somewhere between blueberries and cream cheese, and a blueberry cheesecake. Either way, cheesier than a yogurt pop should be.

So I’m putting out the call: anyone have a yogurt popsicle recipe that actually works? Or even a formula that’s worked before?
