Weekend finds & what I’ve been cooking

New spoon

Happy November! I thought I’d share a general roundup of what I’ve been buying and cooking. First, this beautiful spoon (pictured above). It’s wood but coated so it feels smooth compared to other wooden spoons I’ve used. Plus, the colors! I found it in Wegman’s but there’s no information about the maker. It looks like it’s imitating American folk art designs, wherever it came from.

Next, I found a unique knish in MOM’s Organic Market:

Tofu apple raisin knish

Knishes are typically potato-filled, but this one is made of tofu and apple. It’s one of the “Kisses Knishes” from Sunneen foods in Allentown, PA. I baked it from frozen and then devoured it once it was ready. The raisins go perfectly with the apple chunks.

I also decided to try a new sheet pan recipe: Sheet Pan Burrito Bowls.

I simplified the recipe a bit by using pre-made cilantro lime rice and taco seasoning. I really wanted this to work for the easiest burrito bowls ever, but the result was just okay. The taco seasoning plus the seasoned sausage was a bit strong.

Finally, I’ve been eating my two favorite squashes: spaghetti squash and delicata squash.

Mediterranean sheet pan with delicata squash

I ate the spaghetti squash with tomato sauce and pesto chicken. For the delicata squash, I roasted half moons with chicken thighs and other vegetables, then ate it all with tzatziki sauce and stuffed dolma.
